You probably already know this by now, because I have a tendency to repeat this fact quite frequently. Dinner time can be particularly maddening.
Ohhhhh, Carolyn, they resisted. So good that I fref making it again today. I am happy to report no loss of quality when freezing and defrosting this pie. But no matter how delicious I found the final product.

That would be my best guess, but please note I have not tried it with real sugar so not sure. My experience was that the filling was gelatinous as well, but it did mix with the cream topping well. Chill Time 8 hours. I was very surprised at how close this is to the real thing.
